Very good for chopping. Keeps a nice edge. Handle is somewhat slender, especially for a male user. Would prefer this knife in 5 1/2 inches and a very thin, hard blade. Am wondering if there is a 5 1/2 inch standard knife available and if it has a more slender blade than the Santoku. Used such a blade when vacationing in Hilton Head, staying in a condo.
I choose this rating because this knife is very durable and sharp. A quality WHICH I expected from kitchenaid and they did not disappoint.
